Zucchini
In Greece, zucchini is known as kolokythi (or kolokythia) and is a staple of the local diet. It appears in classic dishes such as kolokythokeftedes (zucchini fritters), gemista (stuffed vegetables), and briam (baked vegetable medley), as well as in everyday stews, while its blossoms (kolokythoanthoi) are stuffed with rice or cheese and fried or baked in their own right. It is not registered as a Protected Designation of Origin (PDO) or Protected Geographical Indication (PGI) product.
